The Estate
We press once a year, and the whole year answers for a single afternoon.
Càrn is one grove on a south-facing ridge, marked at its highest point by a cairn of dry stones stacked by hand. The trees are old, low-yielding, and left mostly alone. There is no second estate and no blended reserve.
Each autumn the fruit comes in over a few days and goes to the mill within hours, pressed cold and unfiltered. What the harvest gives is what the year gives. We bottle it, number it, and let the next twelve months begin again.
